Fermentation Workshop
Hands-on class at Dusty Knuckle to make sauerkraut, kimchi and pickles with chef Clare Heal, take home jars and recipes
All you need to make your own delicious and good-for-you lacto-fermented pickles are vegetables, salt and some patience. Join us at the Dusty Knuckle Bakery School for a hands-on introduction to this magical process.
We’ll make sauerkraut, kimchi, seasonal brine pickles, and preserved lemons. You’ll leave with a jar of each in a Dusty Knuckle tote bag, along with recipes and instructions on how to look after them. But, more importantly, you’ll take away an in-depth knowledge of the science and practicalities of lacto-fermentation and the confidence to pickle anything you fancy.
During the workshop you will get to try a variety of vegetable ferments accompanied by Dusty Knuckle bread and beer from our neighbours at 40ft Brewery.
Clare Heal aka @SycamoreSmyth is a London-based chef and teacher. She writes the fermentation-centric In Good Taste newsletter and will pickle anything she can get her hands on.
